Maple Syrup - phase 2

Last week was the beginning of sap flow. It was everything it always is - crazy, frenetic, exciting and a little bit tiring but overall, a really big relief. The worry of the past weeks is gone. Bill has been working diligently and has collected and evaporated the equivalent of two thirds of our total harvest last year. The last couple days have been colder and the sap flow really slowed down, but the forecast this week looks great, warm, sunny days and cold nights - a dream come true for maple syrup producers!
So now the last few days have been all about evaporating. This the second year we have used the evaporator Bill designed. After last year he redesigned the boiling off pans and so far it is working very well.
